Dudhi/lauki chutney. I made this last week when again the lauki was hard and I have to give up on idea of making lauki sabzi and end up with this chutney. Bottle gourd chutney is specially good during this summer due to this water content and cooling effect. This chutney goes well with plain rice or any variety rice or even with paratha.
Mix all the ingredients and little water in the grinder.. lauki ki sabji. This Recipe can be prepared in three different ways. Instant Pot ,Stove top pressure cooker and on a stove top in a pan. You can have Dudhi/lauki chutney using 10 ingredients and 4 steps. Here is how you achieve that.
Ingredients of Dudhi/lauki chutney
- You need 100 gms of dudhi/lauki.
- Prepare 4 of green chillies.
- You need 6 of curry leaves.
- It's 1 of tomato.
- You need 2 tsp of urad dal.
- It's 1 tsp of mustard seeds.
- It's 1 tsp of jeera.
- Prepare 1 tsp of Jaggery.
- You need to taste of Salt.
- You need 3 tsp of Oil.
There are many names for Bottle Gourd. In some other Indian languages its also called lauki, dudhi, ghiya, sorekai, sorakaya. They are also known as Cucuzza ,Calabash ,Opo Squash in other countries. Sorakaya Pachadi is an Andhra Style Chutney which is made with bottle gourd and is then tempered with a South Indian tadka.
Dudhi/lauki chutney instructions
- Chop lauki and tomato..
- Heat oil in a pan add musterd seeds,jeera, urad dal then add chillies, curry leaves, tomato and cook till soft..
- After that add lauki and cook for a while so that lauki becomes soft then add coriander leaves,salt and jagarry off the flame..
- Cool it then grind in mixer jar and lauki chutney is ready..
