- Prepare 1 cup of besan / gram flour.
- You need 1/2 cup of oil.
- Prepare 100 gms of Lady finger, Slit vertically.
- Prepare 50 gm of cluster beans.
- You need 3 of medium potatoes peeled and chopped in big pieces.
- Prepare 2 of tomatoes chopped.
- It's 100 gm of drumstick peeled and chopped.
- It's 15-20 of small florets cauliflower.
- You need 1 of small ball of tamarind soaked.
- Prepare 7-8 of kokam soaked.
- Prepare to taste of salt.
- It's 1 teaspoon of cumin seeds.
- Prepare 1 pinch of hing / asafoetida.
- It's 1 spoon of grated ginger.
- You need 1prig of curry leaves.
- It's asneeded of coriander leavers chopped.
- You need 2 teaspoon of chilli powder.
- You need 1/2 teaspoon of turmeric powder.
This tangy Kadhi is made with roasted besan, (gram flour) and mix of vegetables. Sindhi kadhi Cheti Chand Special step by step
- Arrange all the ingredients.
- In a kadai fry lady finger and cauliflower separately, and keep aside.
- In a pan, heat oil add jeera, hing, grated ginger, and some curry leaves, after a minute add besan and lower the flame.
- Roast besan on low flame, till the raw smell goes and it changes colour, stir in between, in the mean time keep water ready in a bowl..
- Besan has to become slight brown in colour but not burned, add water stirring continously, to avoid lumps, add sufficient water, because all the vegetables have to be cooked in same water..
- Once the water boils, add red chilli powder, salt, potatoes and cluster beans, vegetables have to go in order of cooking time, the one which takes more cooking time have to go first..
- Cover the lid half and cook on medium flame, once potatoes are half done, add drumstick and tomatoes, cover and cook on simmer flame..
- After 8 to 10 mins, drumstick, potatoes will be cooked and tomatoes will be mushy, now add lady finger and cauliflower, rest of curry leaves and simmer for 5 more minutes.
- After 5 minutes add tamarind pulp and Kokam, bring kadhi to boil, Now adjust the seasoning, and garnish with coriander leaves..
- Switch of flame, serve curry with rice and Ladhi pav. It taste awesome with both😋 Enjoy...
